Baked Chicken and Vegetables Recipe
Ingredients:
- 4 chicken breasts
- 2 zucchinis
- 2 carrots
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 3 cloves of garlic
- 2 tablespoons of olive oil
- Salt and pepper
- Thyme
- Lemon
Instructions:
- Preheat the oven to 180 degrees Celsius.
- Peel the zucchinis and carrots and dice them into small pieces. Chop the bell peppers and onion into small pieces as well.
- Heat the olive oil in a pan and sauté the vegetables for a few minutes. Season with salt, pepper, and thyme.
- Wash and dry the chicken breasts and season both sides with salt, pepper, and thyme.
- Place the chicken breasts in a baking dish and add the vegetables on top.
- Peel the garlic cloves, crush them, and spread them over the vegetables.
- Squeeze lemon juice over the chicken and vegetables.
- Bake for approximately 30-35 minutes in the preheated oven. Serve hot.
