Baked Chicken and Vegetables Recipe

Ingredients:

  • 4 chicken breasts
  • 2 zucchinis
  • 2 carrots
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 3 cloves of garlic
  • 2 tablespoons of olive oil
  • Salt and pepper
  • Thyme
  • Lemon

Instructions:

  1. Preheat the oven to 180 degrees Celsius.
  2. Peel the zucchinis and carrots and dice them into small pieces. Chop the bell peppers and onion into small pieces as well.
  3. Heat the olive oil in a pan and sauté the vegetables for a few minutes. Season with salt, pepper, and thyme.
  4. Wash and dry the chicken breasts and season both sides with salt, pepper, and thyme.
  5. Place the chicken breasts in a baking dish and add the vegetables on top.
  6. Peel the garlic cloves, crush them, and spread them over the vegetables.
  7. Squeeze lemon juice over the chicken and vegetables.
